Seeing all of the elements of this dessert put together on the plate makes it all feel real. It has been a month since starting my first pastry chef job in the production kitchen of Lotus Dining and it has been a massive learning experience. Today's weather is making me crave these zesty lemon and passionfruit tarts I made for an event @bustle_studios a little while ago now. My favourite tart is one that has a crispy, crunchy sable with a smooth, silky filling and some added texture. Credit to @stinemunkjensenphoto for the awesome pic 😊
I also made these vanilla cupcakes filled with custard and decorated them with buttercream in my exam today and was pretty happy with how they turned out.
I made this Genoise sponge as part of my Produce Cakes practical exam at Tafe today and was proud when the chef said my sponge was "excellent." Genoise sandwiched with jam and custard and covered in cream chantilly. Exhausted but content. 😊
Starting my first job as a Commis Pastry Chef has taught me a lot about patience. Patience, hard work and long hours. Going from an office job to a completely hands on work environment has been challenging and rewarding. Yesterday I made these cassis paper garnishes from start to end on my own. Who knew using a palette knife to evenly spread the cassis paper mixture onto a mat would be so difficult? But I got it done in the end and felt happy to see the end result.
