There is nothing as Spanish a a potaje (stew). And it’s simpler than you think! Serves 4 🥔 200gr broad beans 🥔 1 onion (cut in half) 🥔 1 big red pepper (cut in half) 🥔 2 potatoes 🥔 1 chorizo 🥔 1 cup olive oil 🥔 1 cup white wine 🥔 Salt to taste 🥔 750ml water Put all ingredients except the potatoes and white wine on a deep pan on medium heat (Note: Broad beans will need around 1hr to soften so it’s a good idea to put them before the rest of ingredients if you have time and cook in medium heat for 30min before adding everything else). When the onion and red pepper is soft, take them out and mix in the blender. Add the potatoes and white wine 20 min before cook end time. That’s all! #stew
