Tonight’s din-dins: pork saltimbocca. Flipping delicious. Look at the spectacular fat in these @bundarraberkshires pork scotch medallions and the guanciale (rapidly becoming my favourite piece of charcuterie, crafted from the piggie’s cheeks). Medallions bashed slightly flatter, seasoned with salt, pepper and sage and topped with that creamy guanciale. Another wee bash for good measure and get that seasoning into the meat, a light dusting with flour and then into a hot pan with it guanciale side down. Delicious #knowyourfarmer

Royalty in our growroom! Our King Oyster mushrooms receive a 100% organic Oak wood based substrate to stimulate the max amount of flavour compound production in the mushrooms. When slow grown during the cool winter months they also become extremely firm and meaty. A noble treat!! #knowyourfarmer

OMG - how good do these wings look!! It's going to be first come, first served at Yungaburra markets this Saturday. We're almost sold out of whole birds as the impacts of the last few natural disasters take their toll (mainly bigguns left now). Still plenty of the various cuts for the time being - that's wings, maryland, breast, tenderloins, frames, feet, liver, heart, gizzard and for the perfect roast spud - chicken fat!! 😋😋 #knowyourfarmer

The Pointer

A new addition to the breakfast menu this week, and a firm favourite with little people: pancakes with yoghurt and blueberries.   Thick, golden and not too sweet, our mini product tester said hers tasted ‘like fluffy clouds’ ☁️ Pairs beautifully with a beaker of OJ.   Breakfast served 8-10 weekdays / 9-10.30 weekends.
