Our favourite recipes are centred around fresh seasonal ingredients 💚 This roast pumpkin salad uses ingredients that you'll find in season at the Slow Food Earth Market Maitland, and add legumes to make it a perfect vegan meal or side dish. To make: Roast a small cubed pumpkin (skin left on) with three peeled garlic cloves and chopped leek (or onion), rosemary, a sprinkle of chilli, salt and a drizzle of olive oil. Toss and cook until the pumpkin is soft, turning ingredients several times during cokking. Place the cooked pumpkin, sliced garlic, and other cooked ingredients in a large bowl and leave to cook. Add a can of drained cannellini beans, chopped kale (approximately three large leaves, stalk removed) and a small bunch of chopped mint. Drizzle with olive oil and three tablespoons of lemon juice. Toss well and leave to marinate for at least thirty minutes.
