Happy Lunar New Year to you all! 🎊 I celebrated last night with all my extended family by having the most insane Vietnamese feast! My favourite dish for new year has always been the sticky rice cake (banh tet) with thit kho (pork and egg stew cooked in coconut water) 😋 There was also plenty of roast duck, rice paper rolls, DIY banh mi, noodles, pasties, stews, soups, dumplings and more! I definitely know where my love of food came from 😉Wishing you all a happy, healthy and prosperous year ahead 🙏🏼🌙

Os dejo receta exprés de esta SOPA DE VERDURAS RÁPIDA con un toque de jengibre y limón 🍜🍆🥕🌶🍋. Anoche os la mostré en Stories y, como habéis sido muchas las que me habéis preguntado, aquí tenéis la descripción detallada, se prepara en 30 minutos y queda deliciosa, feliz domingo! • INGREDIENTES PARAR 2-3 RACIONES • 1 pimiento verde 1 berenjena mediana 1 cebolla 1 zanahoria grande 750 ml de agua hervida 1 cucharada de cúrcuma en polvo 1 rodaja de jengibre fresco rallado sal y pimienta al gusto 4 cucharadas de avena soluble para espesar (opcional) fideos de espelta integrales (u otros al gusto) el jugo de medio limón yogur de coco (opcional) • 1. Cortamos en dados todas las veduras (las zanahorias en rodajas) y sofreímos con un chorrito de aceite de oliva hasta que estén ligeramente doradas (unos 10 minutos). Añadimos la sal, pimienta y jengibre fresco y removemos. 2. Vertimos el agua previamente hervida y dejamos cocinando 10 minutos. Echamos la cúrcuma y la avena soluble y dejamos cocinando otros 5 minutos (o hasta que veas que el caldo coge gusto). 3. Añadimos los fídeos (yo he puesto unos 100 gr de fideos integrales) y dejamos cocinando otros 2-3 minutos. Antes de servir, rociamos con el jugo de limón y removemos bien. 4. Servimos calentita con un poco de yogur de coco u otra variedad tipo yogur griego y espolvoreamos un poco de orégano. Salud!
