The shops are closed here on Sundays so when I realised this morning I had forgotten to plan a dessert for our barbecue this evening with the neighbours, I got a bit of a land. With a bit of a root through the fridge and fruit bowl I was able to cobble together a solution - poached peaches with frozen yogurt. To make the frozen yogurt I whisked a jar of natural yogurt with the second half of a bottle of cream and the end of a pack of icing sugar. It is in the freezer now and I plan to whisk it in about 90 minutes. For the poached peaches, I heated up a poaching liquid of water, sugar, elderflower syrup, a glass of moscatel wine and a little cinnamon. The peaches are in there now on a very low heat. Later on I will take out the peaches and reduce the liquid to a syrup to serve with the peaches and homemade frozen yogurt. Keep your fingers crossed for me that it all goes to plan.

Don't you just love a berry tart? They are the easiest thing to make and taste delicious. I made this one this morning in between e-mail, putting away the groceries and loading the dishwasher. It's foolproof. Here's how: Preheat your fan oven to 200°C. Lay a sheet of ready rolled puff pastry on a baking tray and use a sharp knife to score a rectangle about an inch in from the edge of the pastry. Prick the pastry within the rectangle with a fork. Bake for approx. 10 mins. Keep an eye on it that it doesn't get overdone. While that is in the oven, knock up a saucepan of custard using 500ml milk and according to the instructions on the pack. Or open a tub of ready made custard. Leave the homemade custard and the pastry case to cool completely then spread the custard over the rectangle of pastry, leaving the edge free. Wash your berries and sprinkle over the custard. Sieve a little icing sugar over the top. That's it. Eeee-zzzeee.

After almost a week of no appetite, I finally felt a few pangs of hunger so I nipped downstairs and grabbed a chunk of the leftover Easter bread from yesterday. In an airtight container it keeps well for a day or two. I say Easter Bread but really the only Easter addition is the coloured eggs. I often bake this for a Sunday morning, making the dough before bed on Saturday night and shaping it in the morning. It is so handy for snacks throughout the day and feeds plenty for a brunch. Turkish pide, homemade, for dinner tonight. It was my first try and I delighted with them. I even have some for the freezer. What's on your list of recipes to try?

Midweek meals tend to be meals in my kitchen. And quite often, these are the tastiest meals. This was delicious today. Pitta stuffed with spinach and a butterbean mayo, a little salad on the side, and homemade chips. It’s so satisfying creating a tasty meal when at first glance the fridge looks empty!!

Om Monday night I was craving flapjacks but hadn't the energy to make them. Tonight I was still in the mood of them and I hit on a brainwave - use muesli instead of rooting out the oats, seeds and dried fruit. I found the end of a jar of coconut oil in the fridge, melted it with a few dollops of golden syrup and chucked in a few handfuls of this really seeded @kelkin_ireland muesli. A quick mix and into the oven. Fifteen minutes later I had a nice little tray of flapjacks (swipe to see them oven ready and fresh from the oven). That's my midnight treat and tomorrow's lunchboxes sorted. What's your favourite quick treat? . . .

So the aul Italian holiday seems to have gone to my head. I used up yesterdays spuds just now by making potato cakes then topped them with taleggio, prosciutto Crudo and tomato and basil salad. . . .

This evenings dinner was a collection of the weeks leftovers, those bits that are too small to freeze but you don’t want to throw out. All pulled together with some corn on the cob and some wedges from @aldi_ireland There was beef stroganoff, gnocchi bake and the end of a bag of lettuce that got turned into Cesar Salad. Throw it into some pretty bowls and everyone helps themselves.
